If you can't wait for the taste and smell of Thanksgiving with poultry and stuffing and savory comfort, try this simple dish. Note: these numbers will be better using low fat and low sodium soups; just could not find way to list the low fat options here. Ingredients

    4 chicken breasts
    1 can cream of chicken soup
    1 can cream of mushroom soup
    1 cup water
    2 tbs. mayo
    1/2 small onion
    1/2 lemon
    small bag 8 oz. herb stuffing
    1 tbls. paprika
    1/2 tsp. celery salt
    salt, pepper to taste

Directions

Boil chicken breasts til done and shred into bite sized pieces. In saucepan, combine cream of mushroom soup, cream of chicken soup, cup of water, mayo, 1/2 a small onion grated (grating it really does give it full flavor from the juice without the crunch of onion), squeeze in 1/2 a lemon and stir over low heat to combine.

Makes 6 servings

In medium casserole dish, spray with non stick and layer 1/3 of herb seasoned stuffing, layer 1/2 chicken, 1/2 the soup mixture, 1/3 the stuffing, the other 1/2 of the chicken, the other 1/2 of the soup, top with final 1/3 of stuffing. Bake at 350 degrees 35 -40 or until hot and bubbly.
