Moroccan Spiced Chicken Burgers

Ingredients

1 pound ground chicken
1/4 cup finely chopped red onion
2 finely chopped garlic cloves
3 tbsp. fat-free plain Greek yogurt
2 tbsp. chopped fresh parsley
1 tbsp. olive oil
1 tsp. garam masala
1 tsp. ground cumin
1 tsp. ground coriander
1/2 tsp. ground cayenne pepper
1/2 tsp. ground turmeric
salt and pepper to taste
4 whole wheat mini pitas
4 tbsp. hummus
1 cup baby arugula
1 cup sliced red bell pepper
1 cup sliced cucumber
Directions
Preheat your grill.
In a medium bowl, combine the ground chicken, yogurt and parsley.
In a small saute pan, heat olive oil over medium flame. Add onion and cook for 3 minutes. Add garlic and cook for 1 minute. Add all ground spices, creating a paste, and cook until the mixture becomes very fragrant, approximately 2 minutes. Remove from heat and add to the bowl.
Divide mixture into 4 portions and shape into patties. Grill until cooked through, approximately 15 minutes.
Serve in a whole wheat mini pita, each with 1 tbsp. hummus, 1/4 cup red bell pepper, 1/4 cup cucumber and 1/4 cup arugula.
