Zucchini & quinoa 1-dish dinner



Introduction

Ingredients

    Onions, raw- 1/2 cup thinly sliced
    Carrots, raw, 1 large thinly sliced
    *Raw Zucchini, or summer squash 1.5 cup - in 1/2 inch thick rounds
    Chicken stock, home-prepared, 1.25 cup
    *Ancient Harvest Traditional Whole Grain Quinoa, 0.5 cup rinsed.
    1/2 teaspoon kosher salt
    cracked black pepper to taste

Directions

Counted as one dinner serving in the breakdown, could also be two side dish servings.

Saute (over medium heat) onions& carrots with a pinch of salt in oil until they just start to caramelize, then add zucchini, rinsed quinoa and stock. Bring to a simmer and cook, covered, for 15 minutes or until the quinoa is tender and most of the liquid has been absorbed. Add pepper to taste and serve.
