1 cup squash, chopped 1 cup zucchini, chopped 2 medium onions, chopped 1 cup carrots, chopped 1/4 cup red wine 1 Tbsp Vegetable oil 1 Tbsp light margarine
Add vegetables, oil, and margarine to a large skillet. Sautee on high for about two minutes, stirring. Reduce heat and add wine. Cook about 30 minutes until everything is tender and wine is reduced. Makes four 1 cup servings.
