Musakhan - Middle Eastern Chicken Casserole

Introduction

Musahkan is the Middle East's version of the Greek "moussaka". It is a casserole that is simply delicious. It is made with chicken, bread, spices and veggies. Number of Servings: 8

Ingredients

    * 5 chicken breast halves
    * 4 pita breads or arabic flatbread (pocketless)
    * 6 medium yellow onions, chopped
    * 1/4 cup olive oil
    * 1/4 teaspoon sumac
    * 1/4 teaspoon salt
    * 1/4 teaspoon pepper
    * 2 teaspoons allspice
    * 1 cup pine nuts
    * 3/4 cups water

Directions

Preparation:
Preheat oven to 350. In a 9x12 baking dish, spread a thin layer of onions on the bottom. Place chicken breast over and sprinkle with olive oil. Add remaining onions around chicken pieces. Sprinkle chicken and onions with allspice, salt and pepper. Pour in water and bake for 30 minutes.

About 5 minutes before chicken is done, add sumac over chicken. Remove from oven and set aside baking dish

In another 9x12 baking dish, grease dish with olive oil. Place two pieces of flatbread in the bottom. Place chicken and onions on top of bread, with about 1/4 cup of juices from chicken.

Place two more pieces of bread on top of chicken. Sprinkle bread with water and bake at 350 for an additional 25 minutes or until chicken is done.

If the bread on top begins to burn, simply cover with foil.

Serve immediately with pine nuts on top (optional).
