1 tsp oil oil
2 oz. shredded mozzerella cheese
2. Top each slice with one slice of tomato and broil for another minute.
3. Top with cheese and basil and broil until cheese is melted.
Serve with a dash of Italian dressing (optional and not included in nutritional info.). You might want to remove the skin of the eggplant, but I don't.
