Roasted Tomato Sauce

Number of Servings: 6

Ingredients

    6-8 medium or large tomatoes quarted
    1 medium red pepper quartered
    5 cloves of garlic smashed
    2 med. or 1 lg. oniion quartered
    1 lemon halved
    1 tsp salt
    .5 Tbs. black pepper
    a few sprigs each fresh thyme, rosemary, and oregano
    or 1 tsp. each of the dried herbs.
    3 Tbsp Extra Virgin Olive Oil

Directions

Preheat oven to 350
Place all the veggies, lemon, and herbs on a baking dish
Sprinkle with salt, pepper, and Olive Oil
Toss to coat
Roast in oven for 60-90 min. ( Check after 1 hr. )
Remove from oven and discard lemon halves
Blend using a food processor, or blender ( I used a hand held blender)
Taste and adjust seasoning to your liking
Great on pasta or meatball subs, or even as a soup.
