2 cups extra sharp chedder cheese
1 - 12oz can of 2 % evaporated milk
1/2 cup of finely chopped red onion
2 cups of frozen chopped broccoli
salt and pepper to taste
Preheat oven to 350 degrees
Whisk eggs, milk and salt and pepper until blend. Mix in onion, cheese, and broccoli.
Using a 12 cup muffin pan - coat muffin pan with nonstick cooking spray and fill muffin cups until almost full.
Bake at 350 for 23 - 28 minutes and let cool.
