Garlic Chicken Stirfry w/ Quinoa

Number of Servings: 6

Ingredients

    1.5lb chicken breast, cubed
    4T olive oil
    half a small onion, sliced thin
    half a red bell pepper, sliced thin
    half a yellow bell pepper, sliced thin
    5 cloves of garlic
    20 basil leaves, julienne
    1/4c crumbled feta

    1c quinoa prepared w/ chicken broth

Directions

Heat olive oil in a saute pan and brown chicken. Add onion and peppers and saute another 3-4 minutes until softened then add garlic and heat all together.

Remove from heat and add basil and allow to wilt. Serve over prepared quinoa and top with a little crumbled feta.
