Baked Green Tomatoes & Tomatoe Gravy

Ingredients

    Tomatoes:
    8 Medium Green Tomatoes
    3/4 C cornmeal
    3/4 C whole wheat flour
    1 tsp salt, sugar, pepper
    1/2 C non fat milk

    Sauce:
    6 medium ripe tomatoes
    1 C sliced mushrooms
    1 large red onion diced
    1 T minced garlic

Directions

Preheat oven to 400 degrees and warm baking sheets in oven.
Slice tomatoes in thin slices.
Mix cornmeal, flour, sugar, salt, and pepper in dish.
Dip tomatoes in milk then coat each side in the flour mixture. Lay on paper towels. Remove baking sheets from oven, spray with olive oil, and place tomatoes on baking sheet-spray tomatoes with light coat of olive oil.
Bake for 40 minutes. Flip after 20 minutes.

Sauce:
Make sauce/gravy while baking the tomatoes.
Saute onion in spray olive oil. Add mushrooms after 5 minutes, then brown. Add tomatoes and garlic and allow mixture to simmer until tomatoes cooked.

Enjoy the tomatoes dipped in the tomatoe gravy mixture.
