1/2 sweet onion - diced
1/2 red pepper - chopped
1 poblano pepper- seeds removed and chopped
1-2 oz shaved Parmesan cheese
11 egg whites- not beaten
Spray a 10" skillet w cooking spray and bring to med-high heat. Season pan w coarse salt and pepper to taste. Pour eight (8) egg whites into hot pan and swirl around until they just begin to set. Top whites w pepper mixture and cheese; pat down w spatula.
Gently pour remaining three (3) whites over the cheese and continue to cook until the omelet begins to pull away from pan.
Then, put omelet under broiler until desired done-ness (cheese is brown, eggs are set on top, etc.) Use pizza cutter to cut into four pieces.
Makes four servings.
