Here is a tasty way to serve squash as a main course, before you go out to the garden and pick 5 more summer squash.
Number of Servings: 4

Ingredients

    Garlic, 2 cloves
    Basil, 10 leaves
    Jalapeno Peppers, 1 pepper
    Banana Peppers, 1 medium (4-1/2" long)
    Parmesan Cheese, shredded, 4 tbsp
    Mozzarella Cheese, part skim milk, 6 tbsp
    Summer squash, 4 cup, sliced

Directions

I slice the summer squash on my mandolin so it is Very thin. I layer the slices in a pyrex dish with a cover, alternate other veggies with the parmesan cheese somewhere towards the middle. Top with mozzarella. Bake 5 minutes covered at 400. Uncover and bake 5 minutes more.

4 servings

Put in a few layers of tomatoes if you have plenty. Add other veggies that are filling your garden.
