Ingredients



    * Egg, fresh, 2 large (remove)
    * Pepper, black, 1 tbsp (remove)
    * Onions, raw, 1 cup, chopped (remove)
    * Condiment - Pam Cooking Spray, 0.50 gram (remove)
    * *Turkey, Ground turkey, 93% lean, 32 oz (remove)
    * tomato paste, unsalted, 11 oz (remove)
    * Carrots, raw, 2 cup, grated (remove)
    * *Kikkoman Soy Sauce, 1 tbsp (remove)
    * *Pace Chunky Salsa - Mild, 5 tbsp (remove)
    * Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry), 2 serving (remove)
    * *Oatmeal - Bob's Red Mill Steel Cut, 1 cup (remove)
    * *Ketchup, Heinz, 1 tbsp (remove)

Directions

Preheat oven to 350.

Process onions and carrots in food processor until fine. Saute vegetables in a little olive oil until onions are translucent and carrots have softened. Let cool.

Mix tomato paste, salsa, eggs and Worcestershire sauce until the consistency of spaghetti sauce. Add turkey and oatmeal. Mix gently, but thoroughly.

Spray muffin pans with Pam cooking spray. Spoon in mixture. (*Note*: Cook with a sheet pan underneath to catch drippings.) Cook 20-30 minutes. makes 24 2 ounce servings

  • I love ground turkey and I'll definitely try this. A problem I've had in the past with ground turkey is that there is a lot of water released during cooking. Also, it doesn't freeze well. - 4/30/10
