1 (15 oz) can of garbanzo beans, drained and rinsed
2 oz goat cheese
1 cup spinach
1 T lemon juice
1 tsp thyme (dried)
1-2 T garlic (to taste)
water as needed to thin
Serve with fresh veggies, crackers, toast, pita, on sandwiches, or mixed into stir-fries and salads.
Makes approximately 8 two Tablespoon servings.
