1 can (15 oz) black beans, rinsed and drained
2 c frozen corn kernals
1 small red bell pepper, seeded and chopped
1/2 red onion, chopped
1 1/2 tsp ground cumin
2 tsp tabasco sauce
juice of 1 lime
2 tbsp olive oil
Let stand for 15 min, then toss and serve.
Makes approx 4 cups (serving size, 1 c)
