Alicia's Garden Fresh Salsa

Introduction

You can make this salsa from store bought ingredients, but you will get a much better flavor if you use farm fresh. This is a favorite around my house. We even use this as a marinade for mexi-night. You can make this salsa from store bought ingredients, but you will get a much better flavor if you use farm fresh. This is a favorite around my house. We even use this as a marinade for mexi-night.
Number of Servings: 20

Ingredients

    2 medium, ripe tomatoes
    1 medium cucumber
    6 cloves of garlic
    1 cup of chopped bell peppers (any color)
    3 tbsp black pepper
    1 dash salt (you'll use less salt if you use sea salt)
    1/2 of a large onion (or 1 whole medium onion)
    1 Splash of lemon or lime juice
    3/4 cup cilantro

Directions

Blend all the ingredients together in a blender or food processor and refrigerate over night to let the flavors blend. Serve cold.

If you want a chunkier salsa, only blend 3/4 of your ingredients, dice the remaining and hand mix in. You will still need to let sit over night.


Makes 20 1/2-cup servings.
