Boneless, skinless chicken breast
Cook 2 servings of basmati rice according to package directions.
Saute Carrots and Mushrooms in 1 tsp olive oil; season with salt and pepper.
Add Curry powder and Cumin.
Add diced chicken and stir to combine.
Add 1/8 cup chicken broth and stir.
Simmer until sauce is formed; add 2 tbsp milk and stir.
Serve chicken and veggies over rice.
Makes 2 servings.
