Quick Chicken and Veggie Stir Fry

Introduction

I threw this together tonight with what I had on hand; it seemed to come out tasty! I'm guessing on some of the measurements, so you'll want to adjust as you see fit. My Italian is homemade so it may be a little different calorie-wise. I threw this together tonight with what I had on hand; it seemed to come out tasty! Ingredients

    6 spears asparagus, fiber ends cut,
    10 green beans, washed, trimmed, and cut
    2 new/red potatoes, diced
    1 small sweet potato or yam, diced
    8 oz boneless skinless chicken thighs (about 2 thighs)
    1/4 c Italian dressing
    Mrs Dash Original to taste

Directions

Cut thighs into bite size chunks and place in bowl. Pour Italian dressing over and let it sit for a minute or two. Cook chicken and dressing in skillet until chicken is done. Remove chicken but leave dressing in pan. Place all potatoes in pan and cook on medium for about 10 minutes, or until almost done (I let the potatoes get brown before stirring--the yams are especially good a little toasty). Add in green beans and asparagus. Cook until beans and asparagus are crisp-tender, stirring occasionally. Add cooked chicken back in, add in Mrs Dash, and stir to combine. Serve by itself (which I did) or over brown rice.
