Dora's Stuffed Portabella Mushrooms

Introduction

I made this recipe up because I didn't have all the ingredients the other recipes called for I made this recipe up because I didn't have all the ingredients the other recipes called for
Number of Servings: 4

Ingredients

    4 medium - large portabella mushrooms
    1/2 cup chopped onion
    1/4 cup diced celery
    2 cloves garlic
    1 cup diced tomatoes
    2 Tbs. butter
    1/2 tsp. ground cumin
    1/2 tsp. basil
    1/8 tsp. cayenne pepper
    salt and pepper to taste
    1/2 cup mozzarella cheese

Directions

Wash mushrooms and remove stems and brown gills set aside; saute onion, celery and garlic in 1 Tbs. butter until slightly brown reduce heat and add tomatoes and spices mix well and remove from heat. Place mushrooms stem side down with a little butter in frying pan over medium - high heat for 5 minutes, remove from heat and set cooked side up fill with veggie mixture and top with shredded cheese return to stove and cook for 5 minutes (covered so cheese will melt) serve warm as a side or an entree (serves 4)
