Refreshing Summer Rolls

Number of Servings: 10

Ingredients

    10 Rice Paper Spring Roll Wrappers (have extras in case they rip)
    4 oz Rice Noodles
    1lb large cooked Shrimp (31/40), shelled
    2 C. Shredded Cabbage
    1.5 C. Bean Sprouts (cut up a little)
    1/2 C. Pea Pods (sliced thin width wise not length wise)
    1/2 Cucumber, sliced super thin


    **Dipping Sauce
    1 T. Sugar
    2 tsp. warm water
    1/4 C. Rice Vinegar
    1 tsp. Chili Sauce
    1 T. Lime juice
    1 tsp. Fish Sauce or low sodium soy sauce
    1 T. finely Shredded Carrot
    1 scallion, thinly sliced

Directions

Soak Rice Noodles in hot water 5-7 minutes (until soft)


Prep Veggies as discribed above.
Soak rice paper, one at a time, until completely transparent and designs disappear. Carefully place paper flat on smooth surface. Place one tenth of noodles on one sade of paper, leaving about 1 inch on each side and to the edge. Place 2-3 shrimp on top of noodles. Add about 1/10 each of cabbage, pea pods, bean sprouts, and cabbage. Bring the edge filling and tuck underneath. As you continue to roll, fold in the sides. Finish rolling. Repeat with 9 more rolls and reserve under a damp cloth or paper towel.


*You may need to lightly spray with non-stick spray to keep from sticking to each other.

Makes 10 servings.



**Dipping Sauce

Disolve sugar in water, combine with other ingredients, and chill until ready to serve.
