Tofu with Bacon-Tomato Butter

Ingredients

16 oz super firm tofu
1 large egg
dash of salt and pepper
1 slice center cut bacon, finely chopped
1 garlic clove, thinly sliced
1/4 tsp smoked paprika (hot if you have it)
2 plum tomatoes, seeded and chopped
2 tbsp butter
Directions
Slice tofu horizontally into 4 planks. Drain on a stack of paper towels, 30 minutes. Meanwhile, whisk together egg, salt and pepper in a shallow bowl.
Heat a grill pan over high heat until nearly smoking. Coat with a thin layer of olive oil or cooking spray. Dredge tofu in egg mixture. Grill tofu until crispy, about 6-8 minutes per side.
Meanwhile, in a small skillet over medium heat, cook bacon until almost crisp; about 5 minutes. Add garlic, cook 2 minutes, stirring frequently. Add paprika, cook 20 seconds, stirring constantly. Add tomatoes, cook 3 minutes. Stir in butter.
Serve 1 slice of tofu with 2 tablespoons of sauce. Makes 4 servings.
