Number of Servings: 9
1/2 stick butter, melted (1/4 cup)
1/4 cup applesauce
1/4 cup honey
1/4 cup coconut sugar
1/4 teaspoon salt
1/4 cup unsweetened cocoa
1/2 teaspoon vanilla
1/4 cup whole wheat flour
1 packed scoop plant based protein powder
*1/2 cup chopped nuts (optional)
Add any mix ins you want. Chocolate chips, raisins, nuts, shredded coconut, etc...
Get out a large bowl and combine the melted butter and sugar with a spoon or whisk. Add eggs, and beat the mixture until it is sort of fluffy and emulsified. Add the salt, cocoa, and vanilla. Stir up really well. Add the flour and protein powder. Stir again until the mixture is thick and chocolaty. Turn the batter into a well oiled 8 x 8-inch pan. Bake at 350° for about 15 minutes. Remove from oven and cool before serving.
