Crock Pot Lentil Soup - 5qt

Introduction

Lentils are "No Soak" to just toss them in under all the chopped veggies and leave on low for 8-10 hours! Lentils are "No Soak" to just toss them in under all the chopped veggies and leave on low for 8-10 hours!
Number of Servings: 9

Ingredients

    2 cups lentils *No soak needed*
    4 cups water
    2 cups vegetable broth
    1 onion, diced
    3 stalks celery, sliced
    3 carrots, chopped
    2 cloves garlic, minced or 3 tsp Minced Garlic
    1 tsp No-Salt Salt (Potassium)
    1/4 tsp black pepper
    1/2 tsp oregano
    1 14 ounce can diced tomatoes
    2 tbsp red wine vinegar
    1 cup fresh mushrooms

Directions

*Use Vegetarian Broth to make the recipe Herbivore Friendly, all we had was Chicken Broth powder at the time of cooking.

Replace any amount of Water with Broth for a stronger flavor.

Will make 8-10 cups depending on how much liquid you put in, and the size of your Crockpot (I have a 5qt).
