Introduction

Ingredients

    1/4 cup spectrum shortening
    1/4 cup unsweetened applesauce
    1/2 cup sugar
    2 eggs
    1/2 tablespoon baking powder
    1/2 teaspoon each salt and vanilla
    3/4 cups whole wheat flour
    3/4 cups all purpose flour
    1/2 cup nonfat milk
    1 scoop body fortress vanilla protein powder
    *1 tsp lemon zest (optional)

Directions

Get out a nice big bowl. Use electric beaters to cream together the shortening applesauce and sugar. Beat them together until they are light and fluffy. Add the eggs, one at a time, beating well after each addition. Everything should be light, fluffy, and satiny smooth. Add the baking powder, salt and vanilla. Mix well with the beaters. Mix the milk with the protein powder and shake to combine. Add the flour alternately with the protein milk, in about 3 batches. Beat the batter smooth. Turn the cake batter into a large well oiled 8 x 8 inch baking pan. Bake at 350. Bake about 25-30 minutes. Check often. The cake will shrink away from the sides of the pan when it is done. Let cool in pan for at least 30 minutes before removing.
