Rich French Onion Soup

Introduction

A rich, delicious, restaurant-style french onion soup. Just remember that both with caramelized onions and with soups it's all about a long, low cooking time to really develop flavors. Don't stop your onions too soon - let them get that nice, dark, melt-in-your-mouth caramelization before you add the broth. A rich, delicious, restaurant-style french onion soup. Ingredients

    4 tbsp unsalted butter
    5 medium onions (I use vidalia, but whatever you like)
    1/4 cup brown sugar
    dried thyme, to taste
    salt and pepper, to taste
    4 cups fat free, low sodium beef broth
    2 tbsp sherry cooking wine or wine of your choice
    6 slices of french bread
    6 slices of swiss cheese (gruyere is traditional, but I buy sliced swiss at costco, so it's much cheaper and easier)

Directions

Slice onions thinly.
In a sautee pan, melt butter on medium heat. Add onion slices. Sautee until onions soften, about 5 minutes. Add brown sugar, stir to combine, reduce to low heat. Cook onions until deep brown and caramelized, stirring frequently, approximately 30-40 minutes (be patient! let it cook slowly!)
In a soup pot (or in your sautee pan if you have room), combine beef broth, onions, wine, and seasonings. Bring to a boil, and then simmer on low for 30 minutes.

Spoon soup into 6 oven-safe crocks or bowls. Top each crock with a slice of bread and a slice of cheese. Put under your broiler on high for 2-3 minutes, until cheese is melty and bubbly. Enjoy!
