Mikey's Granola Bars

Introduction

This is similar to TUESDAYS recipe but with all ingredients I like added in. This is easy for my 7 year old son to make and grab for an out-the-door-fast breakfast. Number of Servings: 9

Ingredients

    2 1/4 cup old fashioned oats
    1/2 cup whole wheat flour
    1/2 teaspoon baking soda
    1/2 teaspoon vanilla
    1/2 cup unsweetened applesauce
    1/4 cup honey
    1/4 cup Splenda brown sugar
    3 Tablespoons sunflower seeds, plain
    2 Tablespoons Flax seed
    1/2 dried cherries, chopped into little pieces
    1/3 cup walnuts, chopped finely
    2 Tablespoons smooth Peanut Butter (I use Jif natural)

Directions

Preheat oven to 325 degrees. Mix all ingredients together well. Pam spray an 8"x8" pan, line with parchment paper, and Pam spray over parchment. Press mixture down evenly. Bake for 18 minutes. Cool 10 minutes and cut into 9 equal pieces. This makes a hefty healthy breakfast that will stick with you, especially if pared with a glass of skim milk!
