Vegetarian Taco Salad

Ingredients

    2 cups fresh baby spinach
    1 large tomato, chopped
    1/3 cup diced scallions
    1 1 oz package doritoes, crushed
    1 oz. sharp cheddar cheese
    4 tbsp Horizon lowfat sour cream
    1 tbsp tree of life organic ketchup
    2 tbsp taco bell mild restaurant sauce
    1 cup kidney beans
    1/2 package taco seasoning mix

Directions

Cook kidney beans in taco mix and 1/4 to 1/2 cup of water. Blend sour cream, ketchup and taco bell sauce. Mix all ingredients together, stir well and serve.
