Homemade Potato Salad

Introduction

This is a great salad with simple ingredients. This is a great salad with simple ingredients.
Number of Servings: 10

Ingredients

    8 red potato (roughly 2000grams)
    5 hard boiled eggs
    1/2 cup kraft mayo w/olive oil
    1/2 cup sour cream

Directions

cut potato into small cubes after peeling.
boil until cooked but firm.
boil eggs. slice up eggs
mix potato,eggs, mayo, sourcream
sprinkle with paprika on top
regrigerate for 1 hour

Ready to serve - makes about 10 1/2 cup servings

  • Better yet to add more fibre, I scrub my potatoes and cook them in the skin, and add a small bit of melted butter and some black pepper, sweet corn and green peas. and finely chopped onion. - 8/7/10
