Sarah's Low Carb Chicken Salad with blueberries

Ingredients

    1 whole roasted chicken (I buy from the grocery deli already cooked.)
    2 Celery stalks chopped
    1/4 Cup Chopped Pecans
    1/4 Cup Mayo (May need more depending on size of chicken)
    1 6 oz container Low Carb Vanilla yogurt (I use Kroger brand)
    Lemon Pepper seasoning to taste
    Salt and pepper to taste
    1 Cup blueberries

Directions


Pick the meat off the bones and shred into bitesize pieces. Toss the Celery and nuts into the chicken.

Mix the Mayo and Yogurt with about 1/2 Tbs (more or less depending on your taste) lemon pepper. Add salt and pepper if you wish.

Pour dressing mixture over your chicken mixture and stir to coat everything. Add more mayo if needed. Lastly, carefully stir in the blueberries so as not to break them. Let sit in fridge at least an hour to let flavors combine. Make the night before and let sit over night for even better flavors!

Serve over a bed of lettuce or in a low carb wrap.

If not doing low carb, you could add in grapes, chopped apple, dried cranberries, onion, etc..
