Lentil and feta stuffed butternut squash

Number of Servings: 2

Ingredients

    600g butternut squash
    150g lentils
    100g low fat feta cheese
    30g sliced black olives
    100g spinach

Directions

Cut squash in half, remove pulp and seeds. Bake for 30 mins 200c/gas 6

When cool scoop out flesh leaving 1cm to skin.

Cook lentils.


Add spinach to lentils and add squash flesh.

Stir in feta and fill squash halves with mixture

Cook for another 15mins
