Sprouted Spelt Mint Salad

Introduction

This is a salad made from sprouted spelt, if you prefer, you can cook the Spelt Grain (1 part spelt to 3 parts water/liquid). If you are on a "raw" diet, you can omit the Klamata Olives, Agave Nectar and Feta Cheese. Ingredients

    2 Cups Spelt, sprouted (can subsstitiute cooked grain)
    2 Cloves Garlic, pressed or chopped
    1 T Olive Oil, cold pressed
    1 tsp honey or agave nectar to (optional)
    2 oz crumbled low-fat feta cheese
    4 Roma tomatoes, diced
    2 cups chopped english/seedless cucumber
    2 oz Klamata olives, sliced (black or green)
    3 T Fresh Mint leaves, chopped
    Salt & Pepper to taste (optional)

Directions

In large bowl, combine oil, lime juice, garlic,mint and honey or agave, blend until emulsified. Add cucumber, tomato, feta cheese, olives and spelt. Toss together to coat. Season with salt & cracked black pepper to taste.

Yield: 4 servings
