I searched the web for various summer squash casseroles and many had too many calories or fat for such a small portion. This is a hearty portion, is healthy, and tastes yummy. Ingredients

    3 medium summer squash, sliced
    1 cup chopped onions
    15 Ritz Crackers, crushed
    4 oz Cabot 50% Light Cheese, shredded
    2 Eggs, beaten
    3 egg whites
    0.25 cup chopped parsley
    1 large clove garlic, chopped
    Black pepper to taste

Directions

Cook summer squash, onion, and garlic in skillet until tender and lightly browned.
Transfer to bowl and mix with all remaining ingredients.
Transfer to 8x8 pan and bake on 400 for 20 minutes or until browned to your liking. Just make sure you cook the eggs through.
Serves 4 as main dish.
