Cajun Fish

Ingredients

    1 Tbsp vegetable oil
    1 small green pepper diced (about 2/3 cup)
    1/2 tsp dried oregano leaves, crushed
    1 can (10 3/4 oz) Condensed Tomato Soup
    1/3 C of water
    1/8 tsp garlic powder
    1/8 tsp black pepper
    1/8 tsp ground red pepper
    1 lb firm white fish fillets (cod, haddock or halibut)

Directions

1. In medium skillet over medium heat, heat oil. Add green pepper and oregano and cook until tender-crisp, stirring often. Add soup, water, garlic powder, black pepper and red pepper. Heat to a boil.
2. Place fish in soup mixture. Reduce heat to ow. Cover and cook 5 minutes or until fish flakes easily when tested with a fork. Serve with rice, if desired.
