Blueberry Oatmeal Muffins

Introduction

A tasty muffin using fresh blueberries and oats A tasty muffin using fresh blueberries and oats
Number of Servings: 20

Ingredients

    DRY INGREDIENTS

    2 cups wholw wheat flour
    1-1/2 cupsrolled oats
    1 cup blueberries (frozen)
    1/4 cup splenda brown sugar blend
    2 tbsp baking powder
    1 tsp salt
    1 tsp baking soda
    1/2 tsp nutmeg (or allspice)

    WET INGREDIENTS

    2 eggs (large)
    2 cups skim milk
    1 banana (mashed)
    1/4 cup olive oil

Directions

Mix wet ingredients in small bowl. Mix dry ingredients in large bowl.

Add wet to dry and mix until all dry ingredients are wet...it will be alittle lumpy.

Put batter into muffin pan (use paper inserts). Fill to 1/2-3/4 of the cup depth.

bake in pre-heated 400 deg oven for 20-25 minutes and until brown.

makes 20 medium muffins
