1/2 large potato, mashed
1/4 cup milk (needed for both potato and eggs)
1 T sour cream
1/2 cup egg substitute
2 egg whites
dash red pepper flakes
.25 t each - cilantro, basil, cumin
.5 t garlic/onion powder
2 t Light Parmesan Cheese
1/4 cup spinach
To make the eggs, beat remaining egg whites and substitute with rest of the milk and reduced cooked spinach. Add red pepper flakes. Scramble on medium heat. When done, fold into mashed potatoes and serve.
