Delicious egg cups for your low carbohydrate, high protein diet or just because they are so good. I make up about 8 at a time (that's how many slices of ham are in my package) for now and later quick meals. Ingredients

1 slice Deli Premiums Deli Cuts 97% Fat Free Smoked Ham Rounds
1/2 teaspoon chopped Scallions
1 rounded tablespoon Weight Watchers Mexican Shredded Cheese
1 large or 3 tablespoons egg white
Directions
Heat oven to 350 degrees. Spray muffin tin with cooking spray. Line tin with slice of round ham; fitting as best you can. Bake for 5 minutes; remove from oven. In small dish mix together scallion, shredded cheese and egg white. Pour into ham lined tin; sprinkle with pepper. Return to oven for 20 minutes or until puffy and cooked through. Remove; let cool for a few minutes. Serve immediately or refrigerate to use later, reheating in microwave or toaster oven.
*I make up 8 at a time; some to use immediately and some to heat up. You can add other vegetables like a teaspoon chopped mushrooms, bell pepper, etc. without adding any appreciable additional calories or carbohydrates. You can also use egg substitute instead of egg whites if you desire.
