Rachel Ray Spinach Artichoke Pasta Salad

Introduction

Quick and Easy to make and yummy for a summer's dinner or sidedish... Quick and Easy to make and yummy for a summer's dinner or sidedish...
Number of Servings: 8

Ingredients

    1/3 cup extra virgin olive oil
    3 T red wine vinegar
    juice from 1 small lemon
    6 oz. baby spinach, chopped
    1/3 lb ricotta salata cheese (but I used feta cheese)
    1/2 cup kalamata olives
    1/2 medium red onion, chopped
    1/2 cup parsely, chopped
    1 lb. penne pasta (I used ronzoni smart taste)
    salt and pepper to taste

Directions

Makes 8 servings.

Mix olive oil, vinegar and lemon juice in the bottom of a serving bowl. Add remaining ingredients to bowl and toss until well combined. Season with salt and pepper.

Works great as a leftover too!
