Mom's Gazpacho - Rawified

Introduction

Based on the recipe my mom used to make. Based on the recipe my mom used to make.
Number of Servings: 4

Ingredients

    4 lg. tomatoes
    1 lg. cucumber
    1/2 med. onion
    1 med. green pepper
    1 tbsp olive oil
    1/4 c. apple cider vinegar
    1/2 tsp salt (I use redmond real salt)
    1/8 tsp black pepper

    In blender, combine 2 tomatoes, 1/2 cucumber, 1/2 the pepper, the onion, olive oil, vinegar, salt and pepper. Blend. Dice remaining vegetables, add to gazpacho. Nice room temp or chilled.
