Very tasty pesto using dry roasted sunflowers seeds instead of pine nuts. Makes about 1 cup. Nutrition Info is for a 2 TBSP serving. I used Thai basil which is especially flavorful. Ingredients

1/2 cup roasted sunflower seeds
1 or 2 garlic cloves. I used 2, never too much garlic.
1/3 cup olive oil, extra virgin
1/4 teaspoon salt (sea salt)
ground black pepper, a pinch
2 cups packed basil leaves, Thai basil is great.
1/4 to 1/3 cup grated parmesan cheese. (optional)
Directions
Add the sunflower seeds to a blender or food processor
Chop the garlic an ad to blender contents
Add the olive oil, salt pepper and basil leaves as well as the parmesan cheese if you wish to include it in the pesto.
Blend until mixture has a consistency that makes it easy to spread or easy to add to foods. About two to three minutes
