Introduction

Ingredients

    I pkg. Italian style ground turkey
    1 lg. green pepper, diced
    1 med. onion, diced
    2 garlic cloves, minced
    2 cans (14.5 oz. each) reduced sodium beef broth
    2 cans (14.5 oz. each) diced tomatoes, reduced sodium
    1 can (8 oz.) reduced sodium tomato sauce
    1 1/2 cups sliced portabella mushrooms
    3 Tbsp. tomato paste
    2 tsp. Italian seasoning
    1/4 tsp. black pepper
    2-1/2 cups uncooked pasta
    1/2 c. shredded parmesan cheese

Directions

In a large saucepan, cook the turkey, green pepper, onion and garlic over medium heat until the meat is thoroughly cooked. Stir in the broth, tomatoes, tomato sauce, tomato paste, Italian seasoning and pepper. Bring to a boil. Stir in pasta. Return to a boil, then reduce heat until pasta is cooked, 10-12 minutes. Garnlish with a tablespoon of pasta and fresh basil if desired.
