Corn tomato salsa

Introduction

This is a salsa focused on the herbs. If you like you can add more tomato and/or corn. If you are very lucky, you are able to pull everything out of your garden. :) This is a salsa focused on the herbs. If you like you can add more tomato and/or corn. Number of Servings: 2

Ingredients

    Sweet Corn, Fresh, .5 cup (remove)
    Tomato, fresh - chopped, 0.5 cup
    Oregano, fresh, .125 tbsp
    Thyme, fresh, 1 tsp
    Fresh Chives, 1 tbsp chopped
    Garlic, 1 clove
    Parsley, 1 tbsp

Directions

Boil the corn for a minute ... longer if from the store. Cut kernels off corn. Chop tomatoes. Mince all the herbs. Combine everything.
I serve the salsa on toast or chips. If more sauciness is desired, you can add another tomato this time pureed. Or drizzle with a slight amount of olive oil and balsamic vinegar. Also, you can add a serving to a hot pan let it cook a bit and add an egg to create a lovely omelet with ricotta cheese add wished.
