3/4 cup unsalted butter, softened
.5 cup sugar
1 cup molasses
1 heaping tablespoon baking soda
3 1/2 cups all purpose flour
1 heaping tablespoon ground ginger
1 tablespoon ground cinnamon
Mix baking soda with 2 tbsp hot water and beat into the dough
Combine dry ingredients in a separate bowl, the add to the molasses mixture and beat well. Shape dough into 2 long logs, wrap in wax paper, and refrigerate for several hours or overnight.
Heat oven to 350. SLice cookies as thin as you can and bake on ungreased baking sheets until golden aroudn the edges, about 10 minutes, watches carefully to prevent burning. Use a spatula to transfer the cookies to a rack to cool.
