Fresh Cucumber Gazpacho

Introduction

A beautiful, fresh, bright green chilled soup, perfect for hot summer days. Serve with grilled shrimp for a light lunch or dinner. Feel free to add whatever herbs you like, some scallions, some onions... whatever tastes good to you. The avocado gives this some body and richness, but it would probably cut the calories in half if you took it out.

Makes approximately 6 1-cup servings.

Ingredients

    3 large cucumbers, peeled
    1 large green bell pepper
    1 avocado
    1 clove garlic
    juice of 1 lemon
    1 tbsp white vinegar
    1 cup chicken broth
    salt and pepper to taste
    3 tbsp chopped fresh cilantro
    1 tsp (or to taste) hot sauce

Directions

Chop all vegetables into even sized pieces. Combine ingredients together in a large bowl. Blend in a blender in batches or in the bowl using an immersion blender, seasoning to taste as you go. Chill in the refrigerator, serve cold.
