Ingredients

    olive oil
    onions
    cucumbers
    asparagus
    mushrooms
    diced tomatoes
    tofu (soft)
    salt/pepper
    garlic powder
    dill weed
    parmesan cheese
    ranch dip
    soft tortillas

Directions

saute onions, cucumber, asparagus and mushrooms in olive oil. add diced tomatoes. add tofu. season with salt/pepper, dill weed, and garlic powder. sprinkle mixture with parmesan cheese. saute mixture for about 5 -10 minutes or until tofu seems cooked through. heat tortilla (30 sec in microwave does the trick), use as filling. top with ranch dip if you'd like. makes about 4 tortillas.
