Yummy Pasta Salad

Introduction

Excellent for lunch! It's very versatile in that you can use whatever veggies you'd like. I didn't use them this time, but grape tomatoes halved were delicious in here! Excellent for lunch! Number of Servings: 8

Ingredients

    1/2 cup vinegar
    1/2 cup white sugar
    1/2 cup olive oil
    1 packet Good Seasons Italian Salad Dressing mix
    1/2 tsp ground oregano
    1 (14 oz) box Barilla Plus Pasta (We used rotini)
    1.5 cups chopped bell pepper
    1 medium zucchini, sliced
    1 cup scallions, chopped
    2 medium stalks celery, chopped
    2 cloves garlic, minced

Directions

Boil pasta according to package directions and drain.
Heat vinegar and dissolve sugar into vinegar. Add olive oil, dressing mix and oregano; combine.
Add chopped veggies to pasta, then add dressing mixture. Toss well and refrigerate.
Makes 8 servings.
