3 medium potatoes, peeled and shredded
2 cups zucchini, shredded
.25 cup onion, diced
1 Tbsp. Canola Oil
Mix the zucchini, potatoes and onion together. Season with salt and pepper as desired. Add to skillet and cook on one side till golden brown. Flip to cook the other side. Serve immediately.
