IntroductionA yummy casserole with healthy black beans and chicken. A yummy casserole with healthy black beans and chicken.
Chicken breast, no skin boiled and shredded.
Old El Paso taco seasoning mix packet (40% less sodium)
One can black beans
1/2 C enchilada sauce
10 carb balance flour tortillas (can use wheat/fat free if desiered)
1 C mexican blend shredded cheese
(Reduced fat sour cream, optional)
Boil and shred chicken.
Cook shredded chicken with the taco seasoning as to the seasoning package instructions.
Add black beans and enchilada sauce to the chicken/seasoning mixture.
Place two tortillas in the bottom of a greased 13x9 pan. Layer with 1/3 chicken/bean mixture and top with 1/3 of cheese.
Repeat layers ending with cheese.
Bake covered at 375 for 30 mins.
Optional: serve with 1 Tbs of reduced fat sour cream for an additional 23 calories.
