Chocolate Coconut Zucchini Bread

Ingredients

    1 large egg
    1 egg white from large egg
    1 cup sugar
    1/2 cup oil
    1 1/2 tsp vanilla extract
    1 cup shredded zucchini
    1 1/4 cup white flour
    1/4 cup unsweetened baking cocoa
    1/2 tsp salt
    1/2 tsp baking soda
    1/8 tsp baking powder
    1/2 tsp cinnamon
    1/4 cup coconut

Directions

Mix together egg, sugar, oil, and vanilla with mixer until well combined. Stir in zucchini. Stir in remaining ingredients. Bake at 350 in a greased loaf pan for about 1 hour.
