Italian Tomato and Pasta Salad

Introduction

Sometimes I add tuna or cooked chicken to this to make it a main dish. Delicious! Sometimes I add tuna or cooked chicken to this to make it a main dish. Delicious!

Ingredients

    12 oz whole wheat rotini (Barilla) cooked
    2 (15 oz) cans diced tomatoes, reserve liquid
    1 1/2 tablespoons olive oil
    2 tablespoons balsamic vinegar or red wine vinegar
    1/4 teaspoon garlic powder
    1 teaspoon dried basil
    1 teaspoon dried oregano
    2 tablespoons grated parmesan cheese
    salt and pepper to taste
    1 small can sliced black olives (optional, not calculated)

Directions

In a large bowl, combine all ingredients, mixing well. Add small amounts of tomato liquid until pasta is evenly moistened.
Chill several hours to blend flavors. Mix well before serving. Serves 8.
