Leftovers Stir-Fry

Submitted by: DRAE2409

Introduction

Simple ingredients and easy preparation made this a great dinner for me and my impatient toddler last night. Simple ingredients and easy preparation made this a great dinner for me and my impatient toddler last night.
Number of Servings: 4

Ingredients

    2 cups cooked brown rice
    6 spears fresh asparagus
    8 green beans, trimmed
8 oz flank or other lean steak (I used the cuts used for fajitas)
    2 Tbsp canola oil

Directions

Cut steak into strips. Fry over medium heat until almost done. While beef is cooking (which only take a few minutes), cut asparagus and beans into bit-size chunks. Add to beef and cover to let veggies steam. Once veggies are crisp-tender, add in cooked rice and canola oil. Stir to combine and cover. Cook on low just until rice is hot, stirring occasionally so rice doesn't burn. I added a little sweet chili sauce to mine at the end, but it's good without as well. Sauce calories are not included in recipe. 4 (approx 1 cup) servings.
